My name is Aymen and I'm 36 years old California girl, who recently graduated from SDSU. I've been dating Ernest (aka EJ) since April 2002 and we've been ttc (trying to conceive) on and off since 2004. He got out of the Army in late 2005 after serving four years, one of those years being spent in Iraq as a Combat Medic. (Support our troops!) EJ and I live with our 9 year old niece Leilani (aka Leila), our black lab Mason and our chihuahua pups with an attitude, Chase and Luna. We live in beautiful San Diego, love the beach, road trips, Disneyland, BBQs and are looking forward to whatever the future may hold.

What do you eat while low carbing? Well, here are some examples!

Lately, I've been asked what I eat while low carbing. I always list off some of meals I make, but sometimes, I can't remember! So I decided to take pictures of the low carb meals, as I make them.

I've been meaning to post some pictures of the dishes I eat while low carbing, but I haven'tbeen low carbing lately so I keep forgetting! I've been taking a break from low carbing for the last week or so because it's been SO hectic in my life. With finals and graduation, I can barely find time to cook. I've gone overboard with the eating lately, and have indulged in just about everything. My biggest weakness is chocolate and bread, and boy have I eaten enough of them! Ugh! I have been feeling completely sluggish and have gained some of the weight I've lost. I don't know how much because I haven't weighed myself for a while, since my sister borrowed my scale and has yet to bring it back. I think it's a good thing though, because I have been able to focus on school and having the best possible time I can at my graduation dinner and celebration weekend.

Today is my Day 1, so I will begin my low carb journey once again. My body is ready to feel leaner and I can't wait to get the next 2 months down so I can once again begin my TTC journey.

Anyways, here's some of the food I eat while low carbing. I'm not a big "meat eater" but I try to include it in there whenever I can. I love jicama and cucumbers when I low carb, so you will see them quite a bit. :)


Home made "chicken nuggets" with low carb ketchup and sour cream. (You can see my boyfriend's french fries in the back. :O lol


Baby tomatoes, jicama, cucumbers, broccoli, cauliflower and ranch sauce.


Shrimp with home made low carb cocktail sauce.


"Huevos Rancheros"
Low carb tortilla topped with scrambled eggs and pork rinds in home made salsa, with a hotdog.




Crock-pot meal: Cabbage, mushrooms, beef, zucchini "stew."


Jicama, cucumbers, scrambled eggs and green beans cooked in butter, with low carb ketchup.


Cream of mushroom soup made with chicken broth instead of milk and chunks of chicken.


Jicama, cucumber, baby tomatoes and lemon-aid with mint and splenda.
