Lately, I've been asked what I eat while low carbing. I always list off some of meals I make, but sometimes, I can't remember! So I decided to take pictures of the low carb meals, as I make them.
I've been meaning to post some pictures of the dishes I eat while low carbing, but I haven'tbeen low carbing lately so I keep forgetting! I've been taking a break from low carbing for the last week or so because it's been SO hectic in my life. With finals and graduation, I can barely find time to cook. I've gone overboard with the eating lately, and have indulged in just about everything. My biggest weakness is chocolate and bread, and boy have I eaten enough of them! Ugh! I have been feeling completely sluggish and have gained some of the weight I've lost. I don't know how much because I haven't weighed myself for a while, since my sister borrowed my scale and has yet to bring it back. I think it's a good thing though, because I have been able to focus on school and having the best possible time I can at my graduation dinner and celebration weekend.
Today is my Day 1, so I will begin my low carb journey once again. My body is ready to feel leaner and I can't wait to get the next 2 months down so I can once again begin my TTC journey.
Anyways, here's some of the food I eat while low carbing. I'm not a big "meat eater" but I try to include it in there whenever I can. I love jicama and cucumbers when I low carb, so you will see them quite a bit. :)

Those look good! I'm a huge fan of cucumbers so that place appeals to me lol.

ReplyDeleteYou're welcome! I think the best thing to do is make sure you always have things for a salad around, and veggies ready to munch on! Sometimes I get home and am STARVING, so I munch on baby tomatoes or cucumbers while I make the food. Keeps me from heading to the less healthy things! Good luck!
